A reminder in this season for those that need to hear it…
We need you to be OK with not being OK and OK with being OK when you are OK.
Pretty proud of the fact that I managed to avoid Amazon for my Christmas shopping this year. Not the least of which is for reasons such as these.

It is impossible for me to hear the words “winter solstice” without thinking of this.

Lefse making begins in lead up to the cooking Christmas Eve morning. Today I’m boiling and ricing the potatoes so that they can then be refrigerated for a few days to let the moisture evaporate.
I use a KitchenAid equipped with the meat grinding attachment to do the ricing.

Here they are after they’re riced.

French 75s. Neat.
