Was craving African Peanut Soup today so I made some. Emeril’s has my favorite recipe. I substitute vegetable broth for chicken stock to make it vegetarian. I also blend in a cup of unsweetened applesauce at the end to give it a hint of tart sweetness.
Mr. Harden finally delivers the Van Halen edition of his Essential Mixes series.

Starting to get very excited to see Hadestown on Broadway in NYC next week. The Original Cast Recording is here but I first fell in love with Anaïs Mitchell’s original treatment of it featuring such folks as Justin Vernon of Bon Iver and Ani Difranco. Both are recommended.
